This event was a banquet-style dinner for the athletes of Swarthmore College
Appetizers
-Mixed greens salad with tomatoes, candied walnuts, cucumbers, black olives and carrots with a choice of ranch, soy ginger, or vidalia onion dressing
-Greek flatbread with Mediterranean seasoning
-Mixed nuts
Entrees
-Chicken stuffed with honeyed ham and imported swiss cheese, served with a Mornay sauce
-Penne pasta with sautéed fresh vegetables
-Roasted Zucchini stuffed with rosemary and brushed with olive oil
Desserts
-Cheesecake topped with fresh strawberries and blueberries
-Oatmeal Raisin, Peanut-butter-milk-chocolate and chocolate chip cookies
